How can God change His mind?

On Mt. Sinai, when God saw what His people were doing, and He felt great regret and wanted to slaughter them again, but Moses intervened and said give him a chance, God changed His mind and let Moses fix it. Doesn't this go against the omnipotence and omniscience of a god-like character? Is this even possible? It just doesn't makes sense.
